The other day, I made a visit to my favorite juice bar.
Upon checking out, I was offered a sample of their freshly baked chocolate and avocado muffin. Being the overly curious person that I am, I just couldn’t leave without trying this strange and, up until then, unheard of concoction. Not only was it the perfect amount of fluffy and moist, but it was hands down the smoothest treat I’ve ever bitten into.
As soon as I snarfed it down and got back to my apartment, I ran across the street to gather up the ingredients so I could recreate the recipe myself. It may not be a muffin, but I can promise you that it tastes equally as delicious and, better yet, it’s healthy!
2-2 1/2 cups unsweetened almond milk
1 cup fresh spinach
1/2 avocado, pit and peel removed
1/2 frozen banana, peeled
1 tablespoon unsweetened cocoa powder
1-2 tablespoons agave syrup
1.) For a thicker smoothie, use 2 cups of almond milk. For a thinner smoothie, use 2 1/2 cups of almond milk. Also, use an amount of agave syrup, between 1 and 2 tablespoons to suit your taste preferences.
2.) Place all of the ingredients in a blender and on high until smooth. Pour into a glass and enjoy!
